Nutrition

Nutritional characteristics of course vary with type of NUTROPI (e.g. Clean Label versus Baker’s Blend), and also within each of these types by the fruit/vegetable/other product.

For example, within Baker’s Blend (BB) there will be nutritional differences between Strawberry and Lemon. However, as the inclusion rate of NUTROPI is usually in the range of 3-8% of your end product, these differences make very little change to the overall final nutritional panel.

For BLEND (B), BAKER’S BLEND (BB), BAKE STABLE BLEND (BSB) and other Blend types such as CB and BB-CH, we offer the following example for a typical fruit:

Per 100 grams Typical Range
Energy Kcal 290 280 - 310
  kJ 1220 1200 - 1300
Protein 2g 1 - 2.5%
Fat(total) 2g 1.5 - 2.5%
Saturated 1.5g 1 - 2%
     Mono-unsaturated 0.5g 0.1 - 0.8%
     Polyunsaturated 0.15g 0.1 - 0.3%
     Trans fats 0 0%
Cholesterol 0mg/kg 0mg/kg
Carbohydrate 75g 70 - 85%
     Sugars added (mainly glucose) 63g 55 - 70g
Moisture 15g 8 - 16%
Total Dietary Fibre 4.0g 3 - 7%
     Soluble Fibre 1.0g 0.5 - 1.5%
     Insoluble Fibre 3.0g 2.0 - 3.5%
Ash 0.5g 0.3 - 1.2%
Sodium 90mg 60- 150ppm

Again, due to the relatively low inclusion rate of NUTROPI in the final product, most of these Nutritional Values would be expected to have minimal impact on the Nutritional Panel.

For example, let’s take the “total fat” of about 2g/100g of NUTROPI (by the way, this “fat” is almost entirely from the cutting oils used in the process, and do not come from the product ingredients themselves).

If NUTROPI is used in e.g. a 40g cereal bar at 5% inclusion rate:
40 * 5% = 2g NUTROPI
2g * 2% fat = 0,04g Total Fat from NUTROPI, per serving (one bar)

Clean Label

The Nutritional Characteristics will vary considerably with CL (Clean Label) NUTROPI.
In Clean Label, there are no Added Sugars and the Fibre is much higher, usually 3-5x higher, than in Blend types.
That is because of all the additional fruit added.

Ingredients List

The declaration of ingredients has different rules in different countries. But one thing to remember is that if NUTROPI shares an ingredient, such as glucose, with the final Product then it doesn’t have to be declared twice.

In most cases, YES you will be declaring the fruit/vegetable that is the NUTROPI type. Examples include Strawberry, Lemon, Orange, Passion fruit, Peach etc.

In other cases such as those Blends using only flavours (e.g. Nut Flavours), then there may be none of the actual ingredient present, just the flavour. Examples include Walnut, Peanut, Bacon, Salami etc.

Blends (typical example, ORANGE BB)

Glucose, orange pulp, cane sugar, orange juice concentrate, modified food starch, apple concentrate, vegetable fibres including agar, citric acid, flavours, natural colours.

Clean Label (typical example, BLUEBERRY CL)

Blueberries, orange pulp, apple concentrate, orange juice concentrate, vegetable fibres including agar. (Flavour-optional)

Fresh Fruit Equivalent (FFE)

With most NUTROPI Blend Types, the FFE values are between 70 – 130%. For example, a Nut flavour will likely have a base of orange and apple ingredients. Products such as Bacon, Salami, Pizza Spice all have tomato and orange as the “base”, and so on.

Clean Label Type is again the exception, with e.g. Blueberry having an FFE of >300%, that is, each kilo of Blueberry CL = >3 kg of fresh fruit.

This is why Clean Label inclusions may permit you to declare fruit content even on the front of packaging, but you will need the specific details from us in such cases.

Packing Specifications

The base packs are 2,5 kg (about 5.5 lbs.) nitrogen-flushed/inflated bags within cartons, which are in turn packed in 10 kg boxes. That is, 4 x 2,5kg cartons within 10 kg net boxes.

These 10 kg boxes are placed on a pallet with either 640 kg or 800 kg net weight, and shrink-wrapped.

The dimensions of each box:
34cm x 42cm, 18cm high
The height/volume of a 640 kg nett pallet: 1.4 metres high, 1.68 m3
The height/volume of a 800 kg nett pallet: 1.7 metres high, 2.04 m3

A 20’ shipping container will usually hold up to 8 MT of NUTROPI, that is, 10 pallets.

Shelf Life

The inner bags of 2,5 kg are flushed with nitrogen and partially inflated. They are then sealed, are air-tight and are protected against compression by both the inflated bag and the cardboard packing structure (of four cartons within a box).

This allows the NUTROPI to arrive in a fairly free-flowing condition, drastically reducing handling and labour costs and operations time in the factory.

Stored in cool, dry and low-light conditions NUTROPI have a minimum shelf-life of 12 months.

In practice, this shelf-life is considerably longer, and we have numerous retention samples that are still fine after two years. The most likely aspect to change is the colour, as the natural colours tend to change tones with time. This colour shift affects some of the lighter colours in particular, such as Lemon, which will gradually darken with time, from lemon yellow to orange and then, after about 2 years, to an orange-brown. In darker colours such as e.g. Blueberry, almost no colour change will occur.

The NUTROPI may also have a slight texture change (harder or softer) after the first 12 months. This change does not normally affect the actual use.

So in many cases, the shelf-life can be re-validated, should this be necessary. Stock rotation is of course the better alternative.

Allergens Declaration

In general, the product range of NUTROPI does not contain allergens as defined by the main categories of the Codex Alimentarius.

The Codex Alimentarius Commission Committee on Food Labelling has listed the foods and ingredients that cause the most severe reactions and most cases of food hypersensitivity. In section 4.2.1.4 of General Standards for the Labelling of Pre-packaged Foods it states:

"The following foods and ingredients are known to cause hypersensitivity and shall always be declared":

Cereals containing gluten; i.e., wheat, rye, barley, oats, spelt or their hybridized strains and products of these;
Crustacea and products of these;
Eggs and egg products;
Fish and fish products;
Peanuts, soybeans and products of these;
Milk and milk products (lactose included);
Tree nuts and nut products;
Sulphite in concentrations of 10 mg/kg or more.

In certain cases where customers ask for specialised products, there may be allergens used, or used in the factory. As of January 2011, this is not the case, but we have done development work in which e.g. tree nuts or peanuts can be used as ingredients, so it is best to consult with us on any “Allergen Statements”.
